What size is the exported video?

At "Source" resolution the export is the crop's own size (a 1080p landscape clip cropped to 9:16 is 608×1080). Pick 1080p for a full 1080×1920.

Is the choice saved?

Yes. The frame and position are saved with the project.

Does it follow a moving subject automatically?

No. You choose one crop position for the whole video.
